The "Tjanabi" All Australian restaurant has been selected for its unique Australian bush-tucker cuisine with a special banquet package negotiated for the occasion. Pre-booking through IWF staff is essential prior to Sunday 23rd.

Banquet Menu

Starters
Freshly baked Wattleseed Damper w Australian cold-pressed olive oil  & native herb flavoured dukka

Entrees
Pan fried Salt Water Crocodile salad w a lime, coconut & palm sugar dressing.
Australian Tiger prawns served w light salad &  lime mayonnaise.
Pate w cumquat brandy & native pepper, served w toasted wattleseed bread.

Mains
Braised Wallaby in tomato and red wine sauce on potato puree.
Fillet of wild Barramundi, oven baked and served with native lime sauce, salad and roast potatoes.
Fillet beef and Guiness Pie.  Served with a bush tomato sauce and roast potatoes.

Desserts
Individual Pavlova w macerated berries, double cream & roasted wattleseed syrup.
Traditional Sticky Date pudding served with butterscotch sauce and double cream.
Panna Cotta, served with a native quandong sauce.
